Honestly you wouldn't believe how many tortilla recipes are in this book. So another variation based on cupboard ingredients and a lack of time which will undoubtedly turn into some kind of scrambled mess. 
The Verdict:
Well the onions were under-cooked which really spoiled the dish as the weird crunchy texture amongst the rest was jarring. I'm not even sure how that happened but it did and it was odd. Was fairly tasty but considering how good the ingredients look this was overall disappointing.
